Job Purpose
The Cost Controller works closely with the Food & Beverage (F&B) and Culinary teams to track, analyze, and control hotel operational costs. This role ensures proper goods receiving procedures, performs inventory reconciliations, prepares P&L statements for major banqueting events, and calculates accurate menu costing to maximize profitability while maintaining high service standards.
Key Responsibilities & Accountabilities
Menu Costing & Pricing Strategy:
Prepare detailed recipe and menu costing in collaboration with the Executive Chef and suggest optimal menu selling prices.
Track price variations of raw ingredients and advise management on menu margin adjustments.
Audit, Receiving & Inventory Control:
Perform spot-checks on the receiving of goods at the hotel to ensure strict adherence to procurement and quality control standards.
Conduct random inventory audits across outlets by reconciling opening and closing stocks against store issues and point-of-sale (POS) data.
Verify and monitor complimentary bar orders, Club Rotana F&B expenses, room fruit baskets, and VIP amenities.
Financial Reporting & Banqueting Control:
Prepare daily flash reports of food costs and audit daily outlet void/cancellation sheets.
Attend major banquet events featuring open bars, prepare banquet revenue breakdowns, and generate event Profit & Loss (P&L) statements.
Candidate Qualifications & Experience
Educational Background:
Bachelor’s Degree, Advanced Diploma, or Certificate in Finance, Accounting, Hospitality Management, or a related field.
Work Experience:
Minimum of 2 years of experience in cost control, accounting, or finance, preferably within a luxury hotel or hospitality environment.
Key Competencies & Technical Skills:
Systems Proficiency: Ability to process store inventory and merchandising data through hotel management and finance software.
Commercial & Operational Insight: Deep understanding of hotel operations, F&B inventory cycles, and cost auditing.
Core Strengths: Strong analytical skills, self-motivation, lateral thinking, effective communication, and results orientation.
